Café de especialidad (specialty coffee) came late to Santiago. Until the mid-20th century, coffee was drunk mainly in the few cafés of Santiago, Valparaíso and other large cities, while households made tea, mate or café de trigo (wheat coffee). Instant coffee then spread through homes and restaurants, and imported coffee makers reached Chilean kitchens from the 1990s.1
Instant still leads at home. In a 2025 Corpa survey, 66% of Chilean coffee drinkers preferred instant powder and 28% whole beans, and only 20% said they drink coffee in cafés.2 The specialty trade gathers each July at ExpoCafé, founded in 2018; the 2026 edition at Espacio Riesco was scheduled to host the national qualifiers for the world Barista, Brewing and AeroPress championships.3
Local tip: For an early specialty cup downtown, R3 Coffee on Miraflores opens at 07:30 on weekdays; in Barrio Italia, Original Green Roasters opens at 09:00 on weekdays and Singular at 11:00.
Where these cafés are: Lastarria & Bellas Artes (3), Vitacura (3), Santiago Centro (3), Providencia (3), Las Condes (3), Barrio Italia & Bustamante (2), Ñuñoa (1).
