Bengaluru's baking goes back at least to 1888, when P V Kuppusawmy Naidu opened a bakery in Shivajinagar; the first Hassan Iyengar bakery is believed to have followed about ten years later.1 Naidu's sold butter and masala biscuits, honey cakes, wedding cakes and varachi, a rusk for dunking in tea, until it closed around 1985.1
Iyengar bakeries now have branches across the city, and Frazer Town's old bakeries still draw queues at Ramadan and Christmas.2 For coffee with a pastry, Indiranagar has the most bakery cafés, well ahead of the MG Road area and Kalyan Nagar.
Local tip: Buy Iyengar milk bread in the morning and a Congress Bun at VB Bakery for the afternoon; at Ramadan, go to Albert Bakery on Mosque Road early for its bheja puffs.
Where these cafés are: Indiranagar (6), MG Road & Brigade Road (2), Kalyan Nagar & HRBR Layout (2), HSR Layout (1), JP Nagar & Banashankari (1), Hebbal & New BEL Road (1).

Nobody agrees which Iyengar bakery was the first, but most settle on the Austin Town outlet.2 Whichever you visit, the milk bread is the thing to buy, sweet and light, along with veg puffs ("pupps" at the counter), honey cake and coconut bun.2
VB Bakery is known for one item above all, the Congress Bun: a soft bun stuffed with a spiced mix of peanuts, roasted gram and coriander.2
The 1888 line has a sequel. In December 2018 Naidu's great-great-grandson, Priyank Sukanand, opened Bangalore Connection 1888 on the same block in Shivajinagar, a production kitchen that bakes the old favorites alongside macaroons and cheesecakes.1
Albert Bakery was founded in 1902 by a Muslim baker who gave it an English name, after Prince Albert, to attract the area's European customers. It started in a godown in Sangam Lane, off Kamraj Road, and moved to Mosque Road in 1912.3 Its keema samosas and khova naan, a flaky pastry with a sweet filling, sell all year, and at Ramadan customers line up for bheja (brain) puffs.2
Thom's, also in Frazer Town, is a bakery and supermarket known for sugar doughnuts and, at Christmas, marzipan and plum cakes. Fatima Bakery, founded in 1957, is known for chicken puffs and coconut cookies.2
