Bread matters in a city where toast arrives free with a morning coffee. Nagoya households of two or more bought 48,561 g of bread a year over 2023–2025, eighth among Japan's 52 prefectural capitals and major cities and well above the national 42,398 g. For shokupan (食パン, the square sandwich loaf that kissaten toast), the figure was 22,447 g, also eighth.1
The city also has its own industrial baker. Morita Zenpei founded Shikishima Seipan in Nagoya in 1919 and began baking in 1920 with a German baker, Heinrich Freundlieb, as chief engineer.2 He saw bread as a substitute for rice after the 1918 rice riots, and the company, which now sells as Pasco, still has its head office in Shirakabe, Higashi Ward.3
Local tip: When a kissaten offers both, ask for atsugiri (厚切り, thick-cut): at Bucyo Coffee KAKO the thick ogura toast cost ¥180 more than the thin in 2024.4

Kissaten toast is cut to order. In 2024 Bucyo Coffee KAKO on Meieki-minami charged ¥350 for thin ogura toast and ¥530 for a thick slice.4 At KAKO's Yanagibashi branch, kinji-an toast cost ¥500 thin and ¥800 thick, while the jam-and-cream Shantie Rouge Special came on thin bread only, for ¥950.5
Shikishima moved early into other baking: Western cakes in 1922, a research laboratory in 1924, and in 1932 what it calls Japan's first electrically run bread oven.2
Tsubame Pan & Milk bakes natural-yeast shokupan. Its Jukukō loaf is lightly sweet; the premium version uses no water, only Hokkaido milk and cream, takes about 40 hours and is baked once a day in small numbers. The Kinuka loaf uses 100% wheat from Biei in Hokkaido. In 2026 a Jukukō loaf cost ¥630 before the 8% consumption tax on food, ¥680 with it.6
The company has seven shops in Nagoya and Nagakute, led by its Amagasaka shop in Kita Ward, and serves a café menu of its own bread to eat in.6 In Higashi Ward, Sotobori Punch is a bakery at Izumi 1-3-7.
The pâtisseries with tables are spread out. Patisserie L'OASIS is at Kikui 1-33-9 in Nishi Ward, Patisserie Setrois at Minamiyama-chō 18-26 in Shōwa Ward, and Craft Works Cafe by Hand Bakes inside Nagoya PARCO in Sakae. Ōsu has a café bakery at Ōsu 3-33-16.
Le Café Chikusa, a bakery café in Shinsakae, keeps late hours, 10:30–23:00 every day. Suidomichi Coffee in Imaike makes its own bread to go with specialty coffee.7
Kissa River is on the ground floor of the Horie Building, a small 1970 building that reopened after renovation in September 2018, next to the Nagoya BOOK CENTER bookstore.8 It is at Tsubaki-chō 12-12 and opens 10:00–18:00 from Monday to Saturday.
Cafe & Bakery MilePost is run by students on the ground floor of Nagoya Gakuin University's Daihō campus in Atsuta Ward. It opens 11:00–15:00 and closes on Tuesdays, Saturdays and Sundays; the students also plan events with the city, local shopping streets and community groups.9
