Kawa specialty, written “speciality” on many Kraków café menus, has a short history in the city.56 Karma opened in 2010, founded by two former high school teachers with no prior experience in coffee.1 By 2016 its roastery ran a Loring Merlin with a 15-kilo capacity, turning out half a ton of beans a month for cafés across Kraków, with green coffee bought from Nordic Approach and Trabocca.1
Coffee Proficiency, a roaster established in 2014, was supplying Wesoła and Tektura at the time, and its showroom doubled as the Polish office of the Specialty Coffee Association of Europe.1 Specialty bars here keep daytime hours. Most close by 19:00, and the earliest, Wesoła Cafe and Blossom Coffee & Food on Rakowicka, open at 07:30.
Local tip: Karma’s roastery bar on Świętego Wawrzyńca opens only at weekends; on a weekday, String Taste on Bożego Ciała, about 300 m away, opens at 08:00.7

Filter first, espresso second
Kraków’s specialty bars have long leaned toward filter coffee. In 2018 AeroPress, Chemex, V60, Kalita Wave and siphon brewing were common, espresso menus were shorter, and asking for a cortado or a piccolo generally drew a negative response.2 In 2016 Karma’s favorite methods were AeroPress, V60 and Kalita Wave.1
