Sydney's specialty coffee is spread across the city rather than packed into one strip. It runs from The Rocks and the office towers of the CBD to Marrickville warehouses and the long run of Botany Road, and several cafés roast on the premises. CBD & The Rocks has the most by a clear margin, ahead of Alexandria & Green Square. Darlinghurst & Potts Point, Kirribilli & North Sydney, Marrickville & Petersham and Surry Hills come next, level with each other, and Redfern & Waterloo is close behind.
The city's loudest endorsement came in February 2025, when Toby's Estate's flagship café and roastery in Chippendale, where glass doors at the back look into the roasting room, took first place in the inaugural World's 100 Best Coffee Shops at CoffeeFest Madrid.1 As of June 2026, the average cup in New South Wales cost A$4.66, three cents under the national figure and lower than any other state except Victoria, according to the Daily Brew Report 2026 from Hey You and Westpac DataX.2
Local tip: To see coffee roasted, go on a weekday morning to Double Roasters at 199 Victoria Road, Marrickville, where the Probat sits at the back of the café, then walk to Sample's new bar on Sydenham Road.

Marrickville's warehouse roasters
Double Roasters took over an old warehouse facing Victoria Road in Marrickville, at number 199, and roasts out the back on a Probat machine.3 The house blend is called Flight Path, and beans are sold to take home.34 It is also one of the earliest specialty cafés to open in the city: 05:00 Monday to Saturday and 06:00 on Sunday.
Sample Coffee has roasted since 2011. Reuben Mardan, who had worked at Mecca and Single O, started it in Surry Hills, and in 2026 it opened a small espresso bar at 37 Sydenham Road, Marrickville, on the site where the team plans to do all its roasting.5 Close by, Roastville at 157 Victoria Road starts at 06:30 Monday to Friday and 07:00 at weekends, and Mule Coffee Roasters and Zest Specialty Coffee Roasters are both on Buckley Street.
From The Rocks to Haymarket
ASLAN Coffee Roasters works from a small espresso bar at 25 Nurses Walk in The Rocks. It buys beans only from the Indonesian archipelago, roasts them in St Peters, and has been roasting since 2009.6 It opens 07:00–15:00 on weekdays and from 08:00 at weekends, while Black and White Espresso Bar is at 140 George Street and Benchmark Espresso on York Street.
Edition Coffee Roasters, on Darling Drive in Haymarket, roasts on site and serves a menu that mixes Japanese and Scandinavian cooking. It brews batch, pour-over, AeroPress, Japanese-style drip and cold brew, and it has been the company's only café since the original Darlinghurst shop closed in October 2018.7 For the office end of the city, Jacaranda Cafe and Roastery is at 61 York Street, and Hay St Roasters is back toward Haymarket on Hay Street.
Botany Road, Redfern and the inner east
Botany Road has The Coffee Roaster at number 380, open from 05:00 on weekdays, and Di Bartoli Espresso & Brew Bar further south at 647. In Rosebery, Allpress Espresso is at 58 Epsom Road and Welcome Dose Specialty Coffee at 61–71 Mentmore Avenue, while COOH Cafe & Roaster is on Bourke Road in Alexandria.
In Redfern and Waterloo, Knock Specialty Coffee is on Cleveland Street and Noble Roasters at 22 Danks Street. Chippendale has Terra Cotta Roasters at 74–80 Ivy Street, open daily 07:00–15:00.
On Manning Street in Potts Point, Gypsy Espresso was once a satellite of Toby's Estate and now roasts its own beans.4 It opens daily 07:00–15:00. Igniis Bake & Roast on Llankelly Place closes on Mondays, and MG Coffee Roaster is on William Street.
Hours, filter and weekends
Specialty cafés in Sydney keep daytime hours. Expect them to close by 16:00, most at 14:00 or 15:00, so an afternoon pour-over needs planning. Most open at weekends too, though Allpress Espresso on Epsom Road and Benchmark Espresso close on Saturday and Sunday, and Trafalgar St Espresso in Annandale opens an hour later then, at 08:00.
Filter is not a special request at the roaster cafés. Sample's Marrickville bar pours hot filter from taps on the counter, next to espresso and oat lattes.5 Numero Uno Coffee Roasters at 11 May Street opens daily from 07:00 but closes at 12:30 on Sunday, and Handcraft Specialty Coffee is at 69–77 King Street.
