Georgian bread has its own oven. Shoti, the canoe-shaped white loaf, is baked in a tone, a round, well-like brick or clay oven whose name is related to tandoor; long strands of dough are pressed onto its inside wall.1 At Fabrika on Ninoshvili Street, the restaurant Tone bakes Georgian-style bread on site.2
The other half of the bakery scene is French and Viennese pastry. Rustaveli & Mtatsminda has the most bakery cafés, followed by Old Tbilisi & Sololaki, with Vera, Vake and Saburtalo level behind them.
Local tip: At Puri Guliani on Saarbrücken Square, order the khachapuri when you sit down: it is baked to order.5
Where these cafés are: Rustaveli & Mtatsminda (8), Old Tbilisi & Sololaki (5), Vera (4), Saburtalo (4), Vake (4), Marjanishvili & Chugureti (2).

Matassé 1822 – La Desserte Royale, on Vertskhli Street in the old town, has a blue Versailles-style room and a chef-owner trained at Le Cordon Bleu; it makes Napoleon, Parisian eclairs and medovik, the layered honey cake, here with milk cream.6
Many cafés bake their own cakes. Daily Grind near Freedom Square sells chocolate cake, apple pie and ginger carrot cake, and GRIND donuts from the Ganjina bakery.6 Corner House Coffee makes gluten-free macarons at ₾3.50 each.6 Anxious & Tired in Chugureti bakes too, with Wi-Fi and outdoor tables.
