Bread came late to Huế. Michel Đức Chaigneau, writing in Souvenirs de Huế in 1867, said the Vietnamese did not know bread, and the researcher Nguyễn Xuân Hoa suggests that the first proper bakeries opened in the capital after it fell to the French in July 1885, when its French population grew.1
Huế's bakery cafés bake or sell bread and pastry alongside coffee. Most are in Phạm Ngũ Lão & Phú Hội or around Lê Lợi & Vĩnh Ninh, with An Garden in An Cựu and Midori in Vỹ Dạ further out. The best known is also a vocational school.
Local tip: For a French baguette, go to La Boulangerie Française at 46 Nguyễn Tri Phương; for Huế's own small bánh mì, wait for the evening, when O Tho on Trần Cao Vân opens at 16:00.3

How Huế shrank the baguette
The French loaf, 80 cm long in France, shrank to about 30 cm in Vietnam, and Huế cut it down again: the petit pain became a "demi-petit pain", a roll Tuổi Trẻ compares to the size of a young woman's hand.1 With so little room inside, Huế sellers spread a thin layer of chili in the bread before the filling, rather than packing in the generous cuts used in Saigon or Da Nang.1
A local variation is bánh mì bột lọc, a roll filled with bánh bột lọc, a chewy tapioca dumpling with shrimp inside. Rusty Compass's favorite in 2018 was on Trần Quang Khai, open only three to four hours a day from about 15:00.2 The O Tho stall began as a street cart at the foot of Trường Tiền bridge before moving to the corner of Hoàng Hoa Thám and Trần Cao Vân, by the provincial post office.1 It toasts its loaves over a charcoal stove.3
La Boulangerie Française on Nguyễn Tri Phương
A bread and pastry school has run in Huế since 1999 with the support of the NGO Aide à l'Enfance du Vietnam, growing out of a market study by two HEC business-school students, Thomas Behaghel and Jean-Christophe Vallat.4 Trainees are aged 18 to 23, must be able to read, write and count, and learn English and life skills alongside baking.4
The course lasts 20 months, ending with a three-month internship, and two new students start every four months; sales of their bread and pastries, through a tearoom in central Huế, cover 95% of the school's running costs.5 In mid-2018, 90 students had graduated in Huế, and 96% of them were working in four- and five-star hotels.6 The shop is at 46 Nguyễn Tri Phương, where Rusty Compass found a conventional French-style baguette.2
Bakery cafés from Phạm Ngũ Lão to Vỹ Dạ
Nguyễn Tri Phương has a second bakery café, Namto House Coffee Hue at number 40. In the Phố Tây blocks, TA Café & Bakery is at 44 Phạm Ngũ Lão, and The One Caffee & Bakery at 3 Hùng Vương has outdoor seating and Wi-Fi.
Light Room Kafe at 16L Hai Bà Trưng has vegan options and brunch and opens 06:30–22:00. Nook Cafe & Bar, which also does brunch, keeps 08:00–23:00. In An Cựu, An Garden - Coffee & Bakery at 98 Phan Chu Trinh runs 06:30–22:00. Midori Cafe and Bakery, at 46 Lý Tự Trọng in Vỹ Dạ, opens only from 14:00 and closes at 21:30.
