A bager (bakery) in Copenhagen sells bread in the morning and wienerbrød all day. The name means Viennese bread, and the method is lamination: a yeast dough is rolled out, covered with a layer of butter, folded and rolled again several times, and chilled between turns so it stays workable.1 The result is the layered, flaky crumb of the whole family.1
The counter keeps a weekly rhythm. On Wednesdays most bakers make the onsdagssnegl (Wednesday snail), a jumbo cinnamon pastry with a softer dough and cream in the middle; the spandauer is a butter pastry shaped into a well and filled with custard or jam, and the frøsnapper a twisted, crunchy stick of pastry, remonce and poppy seeds.2 Sankt Peders Bageri, at Sankt Peders Stræde 29, counts as the city's oldest bakery and sells about 4,000 onsdagssnegle every Wednesday.3
Local tip: Go on a Wednesday and go early: the onsdagssnegl is that day's special at most bakeries, and Sankt Peders Bageri sells about 4,000 of them.3

Sundays, holidays and early starts
Bakeries keep different hours from other shops. Since 2010 they have been exempt from the Danish shop-closing law, so they may open on Sundays and public holidays with no turnover limit.4
Weekday starts are early. Flere Fugle Bageri, at Rentemestervej 82 in Nordvest, opens at 07:00 on weekdays and 08:00 at weekends, and H A N S Coffee, on Boldhusgade in the center, at 07:30 on weekdays. Lille Bakery on Refshalevej is the exception to every-day baking: it opens only Wednesday to Sunday.
Sourdough bakers from restaurant kitchens
A newer group of bakers came out of fine-dining kitchens. Richard Hart, formerly of Tartine in San Francisco, joined René Redzepi of Noma to open Hart Bageri on Gammel Kongevej, with sourdough loaves and a cardamom bun made from croissant scraps and extra butter.5 Hart's bakery at Refshalevej 159A is open daily 07:30–17:00.
At Nørrebrogade 62, Andersen & Maillard combines a café, roastery and bakery in a former bank. Its pastries are by Milton Abel, who worked at Noma and Amass, and it runs a second bakery at Ny Østergade 15 in Indre By.6
Rug, Danish for rye, is the bakery inside the Villa Copenhagen hotel on Tietgensgade, and its day starts with sourdough bread and coffee.7
What a pastry costs
Københavns Bageri opened in Carlsberg Byen in April 2023. That May it charged 42 kr. for an almond croissant, and its co-owner reckoned that 30–35 kr. for a piece of wienerbrød was very average for Copenhagen.8
Konditori La Glace, a konditori (pastry and cake shop) founded on 8 October 1870, is one of Denmark's oldest; its best-known cake, the sportskage, was created for a satirical play that opened at Folketeatret in 1891.9 It opens at 08:30 on weekdays and 10:00 on Sundays.
Where the bakery cafés are
Indre By, Nørrebro and Vesterbro have the most bakery cafés, ahead of Christianshavn. In Vesterbro, Better Bakery is at Helgolandsgade 10, on the same street as the roaster Risteriet, and Københavns Bageri sits at Flaskehalsen 22 in Carlsberg Byen. In Nørrebro, Kaf is open daily 09:00–17:30.
In Frederiksstaden, Kafferiet Esplanaden opens at 10:00 at weekends. Out in Valby, Helges Ost & Bageri on Vigerslev Allé pairs a cheese counter with a bakery and closes at 15:00 on Saturdays.
