Specialkaffe (specialty coffee) in Copenhagen grew up alongside the barista competitions. Danish baristas won four of the first seven World Barista Championships: Martin Hildebrandt in 2001, Fritz Storm in 2002, Troels Overdal Poulsen in 2005 and Klaus Thomsen in 2006, while Norwegians took two of the other three.1 In 2008 the championship itself was held in Copenhagen, and Stephen Morrissey of Ireland won it.1

The taste for clean, bright cups is older than the trophies. Thomsen points out that Scandinavian buyers long chose washed arabica over robusta to brew as filter, which built a public that prefers cleaner-tasting coffee, and that Danes met aromatic, acidic Kenyan coffees earlier than drinkers in many other markets.2 Volume helped too: in 2016, five of the six countries drinking the most coffee per head were Scandinavian.2

Local tip: For a first taste of the light-roast style, order filter rather than espresso at Coffee Collective in Torvehallerne, which serves until 20:00 on weekdays, an hour later than its other central bars.

Coffee Collective and direct trade

Coffee Collective was founded in 2007 and is still wholly owned by its founders Peter Dupont, Casper Engel Rasmussen and Klaus Thomsen.3 Its direct-trade model turns certification around: instead of setting rules for farmers, it sets rules for the roaster buying green coffee. The company trademarked the term to keep it from being diluted, and other roasters may use it if they follow the same transparency principles.4

It now runs eight coffee shops plus Collective Bakery, which bakes for all of them.3 Its bars in Torvehallerne, on Kristen Bernikows Gade, at Elmegade 30 off Sankt Hans Torv and on Jægersborggade open at 07:00 on weekdays. The Torvehallerne bar, at Vendersgade 6D, serves until 20:00 Monday to Friday; the Bernikow and Elmegade bars close at 19:00 every day.

Roasters from Aarhus, Kødbyen and Valby

La Cabra started as a roastery and café in Aarhus in 2012 and arrived in Copenhagen in 2023; its Nordhavn café at Århusgade 118X followed in 2025.5 That café opens at 07:30 on weekdays, and La Cabra Risteri, the brand's roastery café in Indre By, at 08:00.

Prolog was founded in March 2016 by Sebastian Quistorff and Jonas Gehl, who had roasted at Democratic Coffee; it is a micro-roastery whose light style, one 2018 review noted, can taste more like tea than coffee to newcomers.6 Its bars in Vesterbro, at Randersgade 45 in Østerbro and on Papirøen all open at 07:00 on weekdays. Risteriet, on Helgolandsgade in Vesterbro, opens at 07:30.

How to order a light roast

Thomsen dislikes the label "Nordic roast", since Scandinavian roasters differ widely, but describes his own aim as roasting as light as possible without underdeveloping the coffee.2 For a first try, order a filter: Prolog brews espresso and V60 pour-overs, and each cup's flavor follows the coffee's origin and roast profile.6

Batch brew, filter made in a larger quantity and kept hot, is the other common choice. At Andersen & Maillard, a café, roastery and bakery in a former bank at Nørrebrogade 62, the beans are roasted on site and served as espresso, batch brew or AeroPress.7

Where the specialty bars are

Indre By and Østerbro have the most specialty bars, with Nørrebro and Vesterbro next. Copenhagen Coffee Lab has two of them: Sankt Kjelds Plads in Østerbro is open daily 07:00–19:00, and the branch at Strandlodsvej 48 on Amager opens at 07:30 on weekdays. In the center, 20 Grams is on Kampmannsgade.

In Nørrebro, Andersen og Maillard is at Nørrebrogade 62. Jægersborggade was the street of Coffee Collective's original shop, a small space where baristas serve as if from their own kitchen.4 Its bar there, at No. 57, opens at 08:00 at weekends and closes at 19:00.

FAQ

Specialty coffee in Copenhagen: questions

Why is Copenhagen known for specialty coffee?

Danish baristas won four of the first seven World Barista Championships, in 2001, 2002, 2005 and 2006, and the 2008 championship was held in Copenhagen. Scandinavian buyers had long favored washed arabica brewed as filter, and Danes met bright Kenyan coffees early, which built a public for clean, light-roasted cups.

What does direct trade mean at Coffee Collective in Copenhagen?

Coffee Collective, founded in Copenhagen in 2007, uses direct trade to set rules for the roaster buying green coffee rather than for the farmer, the reverse of most certification schemes. It trademarked the term to protect it, and other roasters may use it if they follow the same transparency principles.

Which specialty coffee bars in Copenhagen open earliest?

Coffee Collective's bars in Torvehallerne, on Kristen Bernikows Gade, on Elmegade and on Jægersborggade and Prolog's three bars all open at 07:00 on weekdays, and Copenhagen Coffee Lab on Sankt Kjelds Plads opens at 07:00 every day. La Cabra's Nordhavn café on Århusgade and Risteriet in Vesterbro follow at 07:30.
